What does gluten free mean?

Gluten is a natural protein that is found in wheat, barley, rye and oats. Foods and ingredients made from these grains may also contain gluten. For example, flour, rye bread, graham crackers, and bulgur all contain gluten.

Who needs gluten free foods?

  • It's estimated that 1 out of every 133 Americans have celiac disease, which is a chronic inherited digestive disorder that can cause damage to the small intestine.
  • When a person with celiac disease eats gluten, their immune system is triggered and it begins to attack the small intestine, resulting in damage to the villi which make up the lining of the small intestine. The villi are necessary for the absorption of nutrients. Over time, the damage to the villi can lead to malnutrition.
